Charcoal, tequila and a former Robuchon dining room: Mayfair’s boldest new steakhouse arrives in August

Cordelia’s, a live-fire steakhouse built around bespoke charcoal grills and an agave-led bar, opens on Clarges Street on 26 August, taking over the site of the former L’Atelier de Joël Robuchon.

Clarges Street has spent years being one of Mayfair’s more refined addresses, home to L’Atelier de Joël Robuchon’s tasting menus and hushed dining room. That room is about to fill with woodsmoke. Cordelia’s, an 80-cover live-fire steakhouse, opens on the site on 26 August, and it is building its identity around the exact opposite of tweezer plating: an open theatre kitchen where the grill is the entertainment.

The menu: British beef, global heritage breeds

Head Chef Jordi Sebastianelli, previously of Le Petit Beefbar in Chelsea, is putting British beef at the centre of things. It’s sourced from smaller UK farms and dry-aged in house, then set alongside heritage breeds brought in from further afield, including Galician beef from Spain and Finnish Sashi. The headline dishes are a 45-day dry-aged British rib-eye, a Galician côte de boeuf and a steak tartare, with rotisserie chicken, seafood and seasonal vegetables giving the menu somewhere to go beyond the grill.

The room and the night shift

The dining room pairs veined marble with an oxblood ceiling, walnut burl tables and antique mirrors, built to move from long lunches into something closer to a night out. Head of Bar Iván Eduardo Martínez Mora has built the drinks list around tequila and agave spirits, on the logic that aged tequila’s caramel notes echo the char of the grill. Come evening, a resident DJ programme takes over and the room shifts from neighbourhood restaurant to late-night destination.

The London x London Take: The Robuchon pedigree of the site is doing a lot of work here, and rightly so: it tells you Cordelia’s is aiming at the top end of Mayfair rather than a casual chop house. The dry-aging programme and the spread of heritage breeds put it in serious competition with the likes of Beast and Hawksmoor’s grander outposts, and the DJ-led evening shift is a clear signal they want this to work as a destination past 10pm, not just a dinner booking.
